Our Café Philosophy
Our café celebrates the rich coffee and tea traditions of the Darjeeling region. Every beverage is crafted with locally sourced ingredients and traditional methods passed down through generations. We serve everything from authentic South Indian filter coffee to aromatic mountain teas, all prepared with care and served in traditional vessels.
Traditional Service
We take pride in serving beverages in authentic vessels - brass dabara-tumbler sets for filter coffee, ceramic mugs for chai, and traditional tea glasses for hot beverages. Each presentation honors the cultural heritage of Indian coffee and tea culture.
Local Ingredients
All our spices, herbs, and base ingredients are sourced from local suppliers and our own organic gardens. We support fair trade practices and maintain direct relationships with coffee growers and tea planters in the region.
Traditional Mountain Snacks
Sel Roti
Traditional Nepalese rice bread, crispy and sweet, perfect with masala chai during evening tea time.
Momos
Steamed dumplings filled with vegetables or本地肉, served with spicy tomato chutney and herbal tea.
Baklava
Layers of filo pastry with local nuts and honey, perfect complement to Turkish coffee or herbal tea.
Traditional Brewing Methods
Filter Coffee Technique
Our filter coffee is prepared using the traditional South Indian method with a stainless steel filter. Freshly ground beans are placed in the upper chamber, hot water is poured over, and the coffee slowly drips into the lower chamber, creating a concentrated brew that's mixed with milk and sugar to taste.
Pour-Over Art
Our pour-over coffee uses the manual dripper method with precise water temperature control. The coffee grounds bloom with the first pour, followed by a steady, circular stream that extracts the full flavor profile of our local beans.
