Processing Methods
Washed Process
Traditional method where coffee cherries are depulped and fermented before drying. Creates clean, bright flavors with pronounced acidity and tea-like characteristics.
Natural Process
Sun-dried method where whole cherries are dried before depulping. Results in fruit-forward flavors with heavy body and intense sweetness, perfect for espresso blends.
Honey Process
Partial depulping leaving some fruit on the bean during drying. Creates complex flavors with balanced sweetness and medium body, highlighting the unique mountain terroir.
Our Roasting Philosophy
Small Batch Roasting
We roast our coffee in small batches using traditional drum roasting methods that allow for precise temperature control and consistent flavor development. Each batch is monitored by our experienced roaster to ensure optimal roast profiles.
Freshness Commitment
Coffee is roasted to order and shipped within 48 hours. We believe freshness is paramount to experiencing the true character of Darjeeling coffee, so we never store pre-roasted beans longer than necessary.

Pour-Over Method
Ratio: 1:15 coffee to water
Grind: Medium-fine
Time: 3-4 minutes
Temperature: 200°F (93°C)
Pour in circular motions, allowing 30-second bloom, then steady stream until complete.
French Press
Ratio: 1:12 coffee to water
Grind: Coarse
Time: 4 minutes
Temperature: 200°F (93°C)
Steep for 4 minutes, then slowly press plunger down and serve immediately.
